How To Cook Cholay ki Kachori must see it


Items :

For dough:

clarified Butter (Ghee)/Oil 3 tbsp

Salt 3/4 tsp (to taste)

all purpose flour 1 cup

Water for kneading

For filling:

chick peas (cholay) 1 cup bOiled

Coriander powder 1 tsp

cumin powder 1 tsp

yogurt dip (Raita) – for serving

yogurt 1/2 cup

Salt 1/2 tsp

minced Garlic 1/4 tsp

cumin powder 1/2 tsp

red chili powder 1/4 tsp

How To Cook Cholay ki Kachori :

First make dough… in mixing bowl add flour, salt, ghee and knead it with water

Leave it for at least 1 hr to rest

Make filling… first coarsely mash boiled chick peas… add cumin powder and coriander… add 3 -4 tbsp water… mix and cook till water dries

Transfer in bowl… and cool completely

Then, make small balls out of the dough

Roll in round shape

Put around a tablespoon of filling in middle

And start holding the edges in the middle… having falls downwards

Gather all falls in the middle

Twist and turn

Repeat the same process with remaining dough and filling

Deep fry them in hot oil till golden from all sides

For yogurt dip:
Whip yogurt with garlic, salt, red chili powder and cumin powder

Transfer in serving bowl…. and garnish with cumin powder

serve kachoris’s with raita and enjoy.
